Counteracting the most common cause of food-borne illnesses - improper cooling of cooled food - the DeltaTRAK's heat/cool is said to be the first thermometer to track this cooling rate in a simple and effective way. Available from Temperature Controls, DeltaTRAK's multi-use heat/cool is simple, low-cost, and an effective food safety tool for the commercial kitchen.
Once the food is cooked, the alarm is set to 210°C, the timer started and the SOP (standard operating procedures) for cooling is initiated. When the food cools down to 210°C, the timer will automatically stop to show the total time it took to cool to the safe temperature. Without ever opening the oven door, the heat/cool displays the core temperature while food is cooking, reducing the risk of undercooking, another cause of food-borne illness.
