It is no surprise that high or low temperatures play a central role in food processing applications like cooking, baking and freezing. Maintaining the target temperatures in these processes is often directly linked with the quality of the food or beverage produced. Also, in packaging processes like forming and sealing, temperature plays a vital role in defining both the quality of the product and the productivity of the process.
The goal of any temperature controller design is to keep the temperature of the target device at the set-point defined by the user as accurately as possible and using the minimum amount of energy. To judge the performance of a temperature controller, the following commonly occurring events are often used:
Changing the set value
The time required to reach a temperature after setting a new target value defines when a machine is ready to operate and thus directly influences the productivity. On the other hand a fast rising temperature profile is often connected with a costly temperature overshoot that unnecessarily wastes energy.
Compensating for disturbances
The disturbances in a process can be either process related or unwanted external disturbances. Process related disturbances can be eg, the temperature drop after a sealing or forming process and unwanted disturbances could be a power drop, an unplanned shut down or even something as simple as an opened door. The earlier a disturbance is compensated for the sooner a machine is ready for production again. In addition to time, the required energy for the compensation defines the performance of a temperature controller.
Temperature profiles
For many processes, temperature profiles with defined temperature ramps or even complex temperature profiles may be required. Again the difference between target and actual temperature as well as the energy define the performance of the temperature controller.
